Some Stevia Recipes
There are some special stevia recipes as follows
Whipped Cream
Yields 2 cups
The real thing. Great taste, but it does have real calories!
1 cup liquid whipping cream
1/4 teaspoon Stevia Extract Powder
1 teaspoon vanilla extract
Whip together all the ingredients in a small deep mixing bowl until
soft peaks form. Do not over-beat or it will become a bowl of lumps
(sweet butter, actually). Serve immediately or refrigerate. Variation:
Many spices and flavorings can be used. For example, try a dash of
cinnamon with pumpkin pie or a few drops of almond flavoring to serve
over peach cobbler.
Strawberry Banana Muffins
Yields 12 muffins
Serve hot from the oven and be ready for compliments!
1 -1/4cups whole wheat pastry flour
3/8 teaspoon Stevia Extract Powder
2 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 egg
1/2 CUP Water
1/4 cup vegetable oil
2/3 cup mashed banana (1 large banana)
3/4 cup chopped fresh strawberries
Oil the muffin cups. In a mixing bowl stir together flour, stevia,
baking powder, and cinnamon. Make a depress ion to receive the liquid

mix together egg, water, and oil.
Add to the flour mixture and stir. Add banana and strawberries and
stir just until combined.
Spoon batter into the muffin cups. Bake in a preheated oven at 400
degrees for 20 minutes or until golden.
Are There Risks
to Using Stevia?
Currently, the Food and Drug Administration (FDA) in the United States
and Health Canada of Canada regulate herbal and dietary supplements
as foods, not as drugs. This means that the standard is not as rigid
or restrictive as it is for pharmaceuticals, and they are not approved
for their safety or effectiveness. Many herbs are toxic and the biggest
risk to consumers is when over the counter products are purchased
and consumed and then react adversely with prescription drugs that
a person may be taking. Any kind of herbal supplement should be avoided
during pregnancy or by women who are breast-feeding. The danger in
stevia rebaudiana is minimal.
Minor Stevia side effects are listed below:
Dizziness
Nausea
Headaches
Muscle weakness
Bloating
Although there currently is no conclusive evidence, it is speculated
that Stevia may interact with blood pressure medications and could
affect male fertility.
It has not been proven that drinking Stevia tea has any adverse side
effects. The dangers of Stevia seem to be minimal. On the other hand,
Stevia has been proven to be an effective dietary supplement, sugar
replacement, and health and beauty aid. It is thought that because
Stevia has so many benefits, that there will be a huge explosion of
it’s sale and use if it was approved as a food additive in the
U.S. and Canada as it has been in India, Japan, Korea, and China.
Until that time, it is best to be cautious and consult a health care
professional if you desire to use Stevia in large doses or over an
extended period.
